Otherwise known as "Spaetzle". Does anyone have a good recipe for this sidedish? I'm thinking of inviting some Russian and American friends for dinner in a couple weeks and wanted to make this alongside the chicken paprikas.

Wed, February 13, 2008 - 5:39 AMNokedli is not hard to make it if you have the "Nokedli Maker" "Spaetzle Maker", is a metal piece with aprox 5/8 holes. You can buy this on line.
If you don't have it you can make it by OLD FASHION way with a knife from the cutting board (this will give you larger nokedli) my grandma made it this way.. Or if you have a strainer with large holes and a scraper.
Here is simple recipe for the mixture.
Ingredients:
2 cup flour
2 eggs
1 cup water
dash of salt
Mix all together to get a nice soft and a little sticky dough, not to runi and not to hard.
Don't over mix it and cook it in the boiling water as soon you finish the mixture. Cook it until come up to the surface, strain, you may rinse it with cold water, then put it on melted butter on a very slow heat ro bring it to a serving temp.
I like to mix half all purpose flour and half semolina . -

Wed, February 13, 2008 - 10:56 AMi've made it from scratch before, but sometimes i just run for the ready made Maggi brand spaetzle. i saw other brands at a german sausage shop in Sacramento, CA, so they are out there.
